Lavender Cookies
                                     
Makes 36 heavenly delights!

   3/4 cup Little Sky lavender sugar
   1 stick unsalted butter,
      softened at room temperature

   1 egg, slightly beaten

   1 teaspoon lemon zest (optional)

   1 cup all purpose flour         
      (or rice flour can be substituted
        for a gluten free recipe)

   1 1/2 teaspoon baking powder
   1/4 teaspoon salt


Combine the lavender sugar, butter, egg, and lemon zest (if using). Beat until smooth. Mix the other dry ingredients together with a fork. Add to butter mixture
and mix well.

Drop by scant teaspoons placing at least 2-3 inches apart as cookies will spread while baking, on cookie sheet lined with parchment paper. (We use, as pictured here, a 1" ice cream scoop).
Bake at 350
° F, until edges turn brown (7 to 10 minutes).

~ optional ~ you may replace the 3/4 cup lavender sugar and use, instead, 1 tablespoon Little Sky culinary lavender, ground
