Makes 36 heavenly delights!

3/4 cup sugar
1 tablespoon Little Sky (ground) lavender
1 stick unsalted butter,
   softened at room temp.

1 egg, slightly beaten

1 teaspoon lemon zest

1 cup all-purpose flour         
   (or rice flour can be
     substituted for a gluten  
free recipe)
1 1/2 teaspoon baking powder
1/4 teaspoon salt

Combine the sugar, butter, egg, lavender and lemon zest (if using). Beat until smooth. Mix the other dry ingredients together with a fork. Add to butter mixture
and mix well.
Drop by scant teaspoons placing at least 2-3 inches apart as cookies will spread while baking, on cookie sheet lined with parchment paper. (We use, as pictured here, a 1" ice cream scoop).  Bake at 350
F, until edges turn brown (7 to 10 minutes).
